All of those readings are from the same digital thermometer that we used to measure our water...
asus probe will tell you the fan speed... and the basic temp... but the problem with that temp reading is that it isn't from the chipset heatsink... it is from the winbond controller which is away from the heat sink.
The asus probe is on the asus cd you got with the motherboard. After you go...
Like I've said, without a fan on the heatsink directly, just with fans in the case pointed in the general direction of an asus heatsink without the fan... I am getting temps on the heatsink with a digital thermometerof 42 to 44 C.
That is about 108 F to 114 F... so yes, it should feel hot...

I was shocked to see that my chipset was about 7 to 10 higher than asus probe, but that my cpu was about 5 below!
I have removed my fan and have just left the heatsink... very easy to remove. I actually have 2 90mm fans inside the case aimed in the direction of the heatsink.
