Has anyone ever tried AIMstor? They have a neat video showing the programs configuration at their site.. Data flows and all ... But can't find any reviews on the web.. definitely seems more geared towards enterprise use.. Thoughts?? It can be viewed here http://www.aimstor.com
RedSquirrel, might want to take a look at Proxmox. It runs KVM as a standalone hypervisor similar to ESX. I had it running in less than an hour with multiple VM's the performance has been great. Nice web interface for management. You will find information and download here...
I think PFsense would totally fit the bill here... There are quite a few addon packages that will help you with inspecting your traffic. Give it a try.. http://www.pfsense.org
