I heard a Radiolab episode recently where a company had genetically modified pigs for organ transplant. One of the effects if the modification was the pork was supposedly safe for people who had been infected by the lone star tick.That reminds me. We think my friend got bit by the Lone Star Tick a few years ago, which causes a meat allergy (delayed reaction). She can no longer eat red meat (beef, pork, lamb, venison, etc.). Gets mega-sick within a few hours. I made some chili with ground beef the other day & totally forgot she couldn't have it

roasts go for about $2 to $4 per pound depending on the cut and if its on sale
