I agree, the PC 350s are very nice, my headphone of choice (there's a review here if you want to read more about them: http://www.itreviews.co.uk/hardware/h1607.htm))
I'd recommend Darkstar 1... a nice take on the old Elite formula (check out a review here if you want to read up more: http://www.itreviews.co.uk/games/g263.htm )
How about The Witcher... quality RPG, nice and different (review here: http://www.itreviews.co.uk/games/g391.htm)
Incidentally, the long loading times have been patched and cured (make sure you DL the latest patch if you do get it!)
I'll second World in Conflict for something a little different in the RTS camp.
Also consider Penumbra: Black Plague for a bit of a different take on FPS; it's actually an adventure-FPS (or an FP I suppose ;-), but fab atmosphere, highly recommended (review here if you're interested...
It's not bad, but plagued by a number of issues.
Played it a couple of months back - what it really needs is a good patching. No idea if they got around to patching it though!
There's a review of the MX3000 set here, which might help (if you've not already made your decision)... amongst a roundup of a couple of other wireless sets, too:

I've had systemworks for a few years and have always found it a useful package, though some of it is a bit outdated in the latest edition. Here's a link to a review of SW2006 if you want to read more...
