I checked the manuals and it seems to indicate that it has independent display output for all 3 display ports (VGA, DVI-D, and HDMI)...meaning that it can possibly drive 3 displays.
Can anyone verify or know if this is accurate?

the eSATA JMicron drivers you've used. Update your drivers. Having your OS run off of eSata (JMicron) may also be causing the problem.
Try 355 mhz right away for fsb, no sense in wasting time. Your parts should be able to handle that if you got a good cpu. Even if you got a poorly-overclocking cpu, it'll just BSOD on windows as the worst case.

Only specific chipsets come with them so find out what chipsets support onboard video with hdmi capability. Then find motherboards with that specific chipset.

Well there's a "overclocked" version and a non-overclocked version. Apparently the overclocked version has a better cooler on it (as you can see on the pic).

you can define/initialize the functionality of each drive during boot (I think you press Ctrl-F) or using the webpam application (see ATI integrated motherboard drivers under graphics driver website)

Mine's @ 2.3 ghz and with cool n quiet enabled idles at 30 C (Stock cpu fan used).
the 65 nm x2 chips are better for lower temps though....I had a few AM2 x2 4000+ 65 nm chips. Overclocked to 2.8 ghz from 2.1 ghz (no voltage changes).
Check your memory timings and make sure they are not too tight...

You can use both onboard and your video card at the same time if the video card is also an ATI Card. Not sure what would happen if it wasn't an ATI Card.
To use both, you have to enable SurroundView in BIOS.
I used that same memory too...
Make sure your Command Rate is at 2T, not 1T
And that memory doesn't seem to overclock that well (not sure), but u can always set it to run slower. In other words, try to go by SPD settings. (You can find them if you use cpu-z).
I have 2 of the 65 nm x2 4000+ chips and managed to get them to
2.7 to 2.8 ghz on stock air cooling and default voltages (My mobo didn't allow me to raise voltages)
You should be able to get to 2.5 ghz easily if you lower the HT multiplier and RAM divider.
