What power Supply to get??

Can't go wrong with either corsair or PC Power & Cooling, so I can't argue with either of those choices. They're both great power supplies. OCZ, Silverstone, Seasonic and Tagan are also great brands to choose from.

Power Supply reccommendation for older computer

How much money are you willing to spend and what's the output of the power supply you've got now? I'm guessing the psu you've got now is around 300-350 watts? For your needs I'd say you've got a lot of options, 3 of which I'll give you links to below...

which motherboard to get?

In my opinion, you really can't go wrong with any of those motherboards. However, in terms of which chip set - I'd say you should go for the 680 or P35 chip set. Evga motherboards are fast becoming a favorite of many computer enthusiasts, so I think it's good that you're considering them...

My first question to you is what kind of RAID card are you using? If you're serious about running a RAID setup you shouldn't be using onboard RAID (hopefully you aren't); you're going to need a high quality RAID card. That alone might solve your problems. Onboard RAID is infinitely more buggy...

WOOT! Just ordered my E6850 at the egg!

I think you made a good choice. I have the E6850 and I'm satisfied with it so far. I've OC'd it all the way up to 3.8, but the performance gains I've gotten from it don't justify all the voltage tweaking (and the temperature increases) it takes to get there, so I've opted to run it at 3.54ghz...

600W Power Supply for 2 8800 GTS 640 meg?

If you're running 2 8800GTS cards I'd say you need a lot more 12v juice then that Enermax can pump out. Seriously dude, I wouldn't be using anything less than a 700-750w psu on that system. I could give you some recommendations if you'd like. OCZ and Tagan are two of my favorite brands.
