The motherboard is of much greater importance, when trying to hit 500FSB, than the chip. Like the above poster stated, you can always lower the multiplier, but you can't always count on your motherboard making it there stable.
I'd get a P35/P45 board with a ICH9R/ICH10R southbridge. If you aren't gaming and not overclocking, I'd go for something cheap. The MSI P45Neo3-FR is probably a good bet.
