I would probably go with 1 or 2 of the 3 packs of the Pro model. Like others have stated the AC models still have issues at this point. The unifi software will need to be setup on a server if you would like the option to manage them at all times...
In case anyone cared, the guys finally responed to me and said he can do $185 without the SSD, RAM, and Wireless card. That seems like a pretty good deal.

I think you would be good with any of the Pico PSU and the 1037U. I would save the money and buy one of these boards that already has the 19v input though.

You should also transfer the OS to one of the bigger 500GB drives. The bigger the drive the denser the platters generally (unless it has multiples). This also means it is likely a faster drive than your likely older small drive. Using a big drive as an OS drive is also nice if you don't have...

You can add me to list of people that would like those features if it will help your chance out any. ;) It would be nice to drop down the vcore down a bit for some power savings if they do include it.
I think in general you want your APs in the middle of the house and at the upper most location. You could add a second AP in the basement as well to increase the coverage. Intel wireless cards are the best out there as far as features/stability, but may not give you the best range.
I'm guessing the built in graphics on most server boards isn't too great since it usually isn't needed.
