Which CPU for my new Dell Studio 15?

Either the T6600 or P8700. The T4300 is too slow. The T9600 costs far too much for too little of a game in performance.

Good Heatsink for a Core i5 SFF desktop?

You want to overclock in a SG01-F? Good luck to you. As I recall you have less than an inch of extra space in those cases for putting in a bigger cooler. I personally don't think it will work out very well. Just enjoy your turbo mode and leave it at that :-)

Considering a Move to Water

I don't know of any reason you'd buy the Core i7 920 unless you feel you will have future need of possible LGA1366 upgrades in the future. The Core i7 860 is generally a better processor and motherboards are a bit cheaper.

I don't believe an upgrade to i5/7 would be of much use to you. The Nehalem based stuff is only substantially better than Core 2 processors when it comes to multi-threaded applications.

Suggest a quite case for this build

It is possible to overclock on air an stay quiet if you buy a good cooler. The Noctua NH-U12P would be my choice. Of course, liquid would but much quieter, providing you can afford it.

i7 920 vs i7 860 Gaming/OC which one is best?

I think reviews have been pretty clear that the Core i5 is better than the Core i7 920 for gaming. Unless he is giving you that Core i7 920 and mobo for a crazy low price I'd skip it and go for the Core i5.
