Is Bootcamp the best option for Windows?

Virtualbox is a free alternative to Parallels/Fusion. Always wondered why it's almost never mentioned. https://www.virtualbox.org/wiki/Downloads But yes, if you want to try playing a game or something that would require better performance, Bootcamp would be the answer.

What else do I need to be secure and prevent tracking?

Extensions like Ghostery inject surrogate scripts so that some functionality isn't broken when certain things are blocked. Adblock Plus doesn't do this. But if all you care is that the tracker is blocked then ABP and the ultimate list will work fine.
