Is it worth it to Step-Up from 780 Ti to Titan Black for the Increase in VRam?

Yes. I did that for my last system. I finished my new PC this January, which was about 5 years from when I built my PC before that.

GPU Choice for a Long Term Build (4-5 Years)

That is actually what I did for my current build. I have 2 HD 4890's and I can say they were doing great until just a few months ago, and a BioShock Infinite later :'( Had to drop down my settings (without cranking my fans to 100%, my GPU's hit 96c) for the first time in 4 or so years.
