Ehm, why don't you just pin them on your Start Screen? The apps can be uninstalled/unpinned. There is All Programs on Start Screen too. Also, there are more spaces for your regularly used programs/shortcuts on the Start Screen (as in Windows 8.1) compared to the old Start Menu.

You said the NUC was a piece of hardware that you could grow with right? Note the "Upgrade as you need". As in a thin client infrastructure you do not need the desktop side of the client. Employees have their own VM session on the cloud, you pay for unused resources = waste.

Actually not, the pre-built PCs only carry the warranty of these PC manufacturer, in this case Dell and it's only 1 year (extendable for a fee). When you buy parts, you get more warranty, for example the i7-4770 has 3 years parts/labor warranty from Intel.
