You can see that the text is blurry on the nvidia side so nothing with rendering, and even if there is, you cant know from this video. He stated that he captured both videos at different time, clearly the focus was more accurate with the amd video and not the nvidia one, TBH, the question is why...

"Native" 1440 144Hz monitors use DisplayPort not DVI, which is the issue here, running the DVI bus at higher clock than the spec lists, and that is something that only affects reference cards, not the custom ones.

144hz 1080p Overwatch gaming. Looking for video card and display recommendations

We don't know what settings AMD "considered" as "Max". acording to their numbers a 270X is doing 76, when according to other benches a 7950 (~ 270X in performance at stock give or take) is doing 40-50FPS, so we don't know how really the 480 will do, you need a 980 Ti to run it at max settings...

Is It Okay To Play At 1080p On A Native 1440p Screen?

Don't buy the S2716DG. As much as I love Dell's displays, and I have an ultrasharp display on my desk, this one is horribly overpriced ,a TN panel for retail price... Also half the reason you want to buy it is to play at 1080p from a console = waste so much money on G-sync you cant use on panel...

3 monitors 1 GPU?

depending on the card, some cards switch between connectors so you cant use all at the same time. and as far as DP goes, DP1.2 can be daisy Chained up to 3 1080p monitors from 1 GPU Output.
