It is because you said you will be doing DC work with the new system that I picked the Noctua heatsink. The bundled cooler is fine when you won't be pegging the 12 cores at 100% but not for mining or DC work.
I think the PSU should be ok for a while, I would see how it goes and look to...
I've been playing Bannerlord a lot, talk about a time sink. It does seem to use more than 4 cores although I've not really been paying to much attention as it seems to run ok on my 3600
I've read plenty of posts on hardware forums from people complaining of poor performance, crashes, freezing etc and it's turned out to be caused by trying to use an old OS install after a CPU, motherboard and ram upgrade.
Graphics cards are annoyingly expensive and now when the used Vega 56 I bought that seemed like such a good deal on Ebay has died I'm stuck with a 1050 ti again.
Still I'd rather game on a 1050 ti than a console

Make sure the ram you buy is a kit of 2x16GB sticks rather than buying 2 separate 16GB sticks.
You should look for 3600Mhz ram with tight timings for best performance.
When you say your 2015 Windows 10 install did you replace the components in your build list and boot from a drive with a Windows installation from your previous system? If so that would likely be the cause of problems and you should do a clean install of Windows.

That's what I did anyway for my 3570k and it still never breaks 60c under load
I was guessing how much storage you need. The OS and applications would go on the m2 along with your current project videos. I put the 2 large HDDs for raid 1 storage. No idea really how much data storage you need. You can replace them with more SSD if you think that would be better.
The crucial mx500 shouldn't be the cause of hanging, not if it's working right. The 4k QD1 random read and write is not that much slower than the fastest most expensive NVME drive available.
I am using a 1TB Crucial BX100 as my boot drive on a 3570k system and I would say it's pretty snappy...
