You can use V3.efi also but for me I get wrong CPU with it and other V3xx.efi files. Only V3_1.efi is working correctly but my CPU is ES version so you should be fine with V3, V3x2 or any other. Also you can search for V3x2_cp39.efi with already loaded microcode in the file, so no need to load...

You need to choose in bios to load the OS in UEFI not in Legacy mode and then install Windows.
