When occt failed, what were the max Temps? If they were pretty low and you got that error message you probably need to bump the voltage. If the temps were high, then the heat sink is not making good contact.
According to passmark, the AMD has around double the performance of the Celeron. Based on your usage, I don't know that it really makes a difference though, and the Celeron probably has better battery life.
It's a chip on the motherboard. I'm not sure if all three of those temps are the ITE chip or not. I doubt it is actually reading at 76C though. Most likely hardware monitor isn't reading the temperature sensors controlled by the ITE chips correctly. Seems like this is a popular problem...
I don't see the 8350k getting to 5Ghz without a lot of extra effort (e.g. delidding, non-stock cooling...generally things people do who spend more than $150 for a CPU).
I wouldn't worry about it. ASRock is known to cut corners to achieve their price point (not always a bad thing). Their PCB design is likely just as thin as the Strix board. Motherboard margins aren't great (except maybe at the very high end). You usually get what you pay for.

Well although anecdotal, I noticed a slightly slower performance going from my BPX back to an 850 Evo. Yes, still much faster than a spinner but it just seemed slightly laggy on the Evo.
