The only thing I hope for is that after the release of this 'super' line, the prices of current RTX/GTX cards will drop at least a bit (so I can buy at least a 1660 ti more easily, lol)

Yeah, AFAIK, GOG is pretty safe to use. That's one of the reasons Galaxy is already one of my favorite game launchers and providers (even if I'm mostly an Steam guy)

I think that specifically for audio 3.5 is better. There are some good high-end 3.5 cables with noise reduction around there, as they have audio in mind. While through USB you use a digital data cable, it's not designed to 'sound' better or anything, just to transfer data as best as possible.

To be honest, even if I also don't like to have multiple launchers, this new GOG frontend feature sounds very interesting! Besides Steam, I've been already forced to install Ubisfot's, Blizzard's and EA's launchers on my system anyway, so a way to have them easily condensed in a single place...

PC randomly shuts off, seemingly unrelated to temps/load

It may be unrelated to hardware component temperatures, but NOT to actual PSU temperature. You should check out if your PSU is not overheating. Even something simple like a loose fan cable inside the PSU could cause thermal problems.
