For inbound email you need a registered domain name and you need a MX record on the DNS server for that domain to point to your server. In addition you'll need to configure exchange/your accounts to have email addresses under the domain.
I've installed it in the lab and in one small deployment and havent had any issues.
One thing to keep in mind is that if all you want is the tools you can install the SP1 tools and leave your server(s) running gold.
Remote Desktop is XP Pro only (though XP Home does include Remote Assistance for support).
VNC would be a good alternative that you can run on XP Home.

As memory serves it's the x86 to x64 architecture change that stops you from upgrading. You can upgrade XP x64 to Vista x64 and x86 XP to x86 Vista but not x86 to x64.

2007 clients have no problem getting redirected for that reason, the issue is with the 2003 clients who do not get redirected until they first connect to the old server.

It depends on the hardware. Purpose built routers route in hardware and can be very fast, granted most of the consumer hardware does not fall into this bucket.
It is purely anecdotal, what's most important is that your hardware has VT support, you have enough RAM and fast enough storage. In other words the hardware is far more important.

Adding in something like IP Cop, Smoothwall, etc. is going to add some latency, especially if you are pushing a lot of traffic through it and/or the hardware is slow enough that it causes an issue.
That said it's likely not going to add enough latency to be an issue, if you're using hardware...
