how should i partition my 80 gig WD hd w/ 8mb cache?

Partitoning with DOS fdisk is a bad idea IMO, way too slow for large partitions, many hard drives come with utilities (Data Lifeguard for WD) that can quickly create and format FAT32/NTFS partitions upto 100% of capacity (limited by filesystem spec).

I have a k7s5a but don't have any experience on GigaByte, but I can speak for k7s5a. With new overclocking bios, my TB1.4G is OC'ed to 1.55GHz stably (by fsb only) and seldom goes above 50C, depends on the room temp. Antec400W, Alpha 8045 and Panaflow-h1a are used. I cannot bare more noise...
