I finally got non-choppy audio (and video...) after doing the first step Ulead suggested above and changing my DV from type-2 (default) to type- 1:
Ulead Video Studio 8 -> VideoStudio Editor (not VideoStudio Movie Wizard) -> Capture tab -> Options -> DV Type -> DV type-1 (instead of DV type-2)
Following according to Ulead support, trying now, will posts results of their suggestions as soon as I've tried them:

Based upon Google results this is likely a VideoStudio 8 issue. I was hoping someone in the community has experienced this and was able to resolve it. FYI - the audio gets progressively choppy when capturing in MPEG, and even worse when capturing in WMV - plus the video looks like it's in fast...
