are these EVGA? If so it would 797MHz vs. 732. I would be tempted to get the lower vram version because of what I heard of 570 overclocking but I don't know. If it were the classified (822MHz) it would be an easier choice.
well that chart claims the 12th of February. I saw something on fudzilla saying availability of the 7970 will be good on the 9th so maybe it will be the same for Pitcairn. I'm thinking it might be a month or more later though for custom cooler models but we'll see
That is what I read a while back but recently I have been seeing other opinions. That 7600 series and lower will be based on VLIW5 and everything above would be GCN.

Overclocking the cpu does help and most reviews don't show this because the test setup was thought out poorly. Kinda sucks that we're almost in 2012 and many review sites still do things the old way instead of thinking about it and doing it right (and this includes a lot of the major sites)...
I believe for mobile cpus the difference between i3 and i5 is pretty small
They are both dual core. The i5 has turbo boost which allows short term overclocking (controlled by the PC, not you).
If you want a big difference you need to get the i7 which are quad core
