Looks neat, but $186 a square foot is a little on the steep side. Plus the cost of getting power to it, and adding heat and AC. I assume it's big selling point is that it's a DIY setup.

-If it's anything like how any of my home repair projects go, where I take off a slab of drywall/flooring/whatever is covering things up and realize that some long dead contractor took every shortcut in the book and I am in no way shape or form prepared to get this up to code, then one day is definitely an optimistic timeline.

Odds are the guys in the video are not only veteran builders, but also did several "dry runs" before filming so all the parts, pieces, hang-ups, problems, etc were sorted before the first screw went in. Likely another day or two of just preptime to get the whole thing taken care of in one (film) cut.
