The service is OK, not great.
My problem with it is only that it's not very mozilla-friendly.
That is, it's okay if you need to post special files (e.g. XML, quite common nowadays) they won't necessarily work correctly. They dont' for me in Firefox.
Their servers are Micro$oft.

other than that, pretty nice

that's my $0.02

I'm using the 3 year free service as well. I had an existing domain and pointed it to 1&1 via DNS entries. Not sure what you are referring to here. Your initial login and password is totally random. After that you can create your own accounts such as bob@bobiscool.com and you can set the password to whatever you want.

I'm also using the 1and1 free hosting.

I use it to host a friends online Guild Website.

The main complaints are, the control panel is slow, and while I do have a domain for the website, when I create ftp logins the are horrid. Like: <numbers>-<name>

So it comes out like:
u134534545-ftphost

And by the email, while you can do joebob@joebob.com the username it associates with it is crazy, like mailbox234789-1.

Its been reliable, but several things could be better, but hey... its free!

Haven't BEEN any dowtime issues in the year + I've been using them. How's that for quality service?

I too have the 3yr free trial (found on this forum last year). I've had numerous outages on their email, reported by Outlook. But they're generally very brief. As for their generated account logins, I have no problem, since I use KeePass to manage all my logins. ;-)

Someone had me do a website with 1and1 hosting, Microsoft business package. Control panel was horrid, account names were a pain, servers slow, no mysql, and the proprietary scripts blow. The linux plans look ok but never again for me.

Been using pair.com for a business site, now that's some good hosting. Have another client that's going to give lunarpages a try. I used to do everything on crediblehost but they've been going downhill lately.

I've used lunarpages and they use CPanel which is really nice. I've since moved to my free 1and1 accout which works nicely. Same speeds as lunarpages. I don't like their control panel or usernames but it's also free (or cheap today). Just set your FTP client to remember the username and be done with it.

also be careful using 1and1 as a domain registrar becuase their registrar is actually overseas and when i e-mailed support i got other support e-mails from other customers forwarded to me and after replying to them six times never got my question answered.

They had some major problems with email delays about 6 months ago. Everything was delayed for long periods...I believe the issue has been resolved for awhile now though. If you get a paid account (not the free trial), they now support IMAP and spam filtering if that is your gig.

At work we purchased a managed dedicated server from them; it works out alright. We got so fed up with the email that we decided to run our own SMTP server within the office, though.

Support is so-so; they will get back to you, but they are generally only good at troubleshooting simple problems.

Their price for what you get is very attractive, however. Pair has GREAT support, but they unfortunately nickle-and-dime you to death for extra features (their space/bandwidth amounts have improved recently, however).
