Any reason you could not buy 3 kits of this and go tri-channel 12GB with a i7 setup? Or do you need to buy the actual triple channel kits?

You can definitely do that. You actually can mix multiple different kits (companies, speeds, etc), just won't run as good as it would if they are same manufacturer/speeds/sizes/etc.
FYI, there is a thread with 2x4 gb kits which would take you to 24 gb ram. Just another option.
