use rivatuner and try the stock cooler first, most of these cards will do ~600mhz+ on core, ~1450mhz+ on shaders, and ~900mhz on the memory (if you have the A2 revision). The A3 revisions clock a bit higher (most of them hit 650mhz on the core pretty easy it seems).
My 8800 GTS 640 A2 runs 650/1000 with stock cooling and RivaTuner for 16 months now without a problem. My case is very well ventilated with a 120mm sucking at the front, 2 x 120mm blowing at the back and a 120mm blowing backwards in the middle of the case. So it depends I suppose....
