Tastes like an old canvas that's been in the basement for a few years. Like most "delicacies", poor people made due with what they had, and used bad/marginally edible food, and in an amazing display of savvy and fraud, scammed people that have money into paying a lot for it.

I like Blue cheese but everyones taste is different. Personally I don't really like feta, I have tried loads of different types and it just doesn't do it for me.

On a side note given the American way of turning anything that takes a lot of effort/time to make like cheese into some sort of rubber slice or making it squirty I would be very wary of anything that purported to be "blue cheese" on a burger in anything but proper restaurants over there.

There are as many types of bleu cheese as there are cheddar. The same rules for freshness apply. The easiest way to make all cheeses last longer is to change the plastic wrap every time you open it. Try a mild gorgonzola. It's a 'gateway ' bleu and there's nothing like a good port and Stilton.

Bleu cheese is one of those foods that I just can't stand in my mouth in any form or fashion. Just makes me want to hurl.
