Hey I was just wondering if the stock paste on the AC Freezer 7 Pro was worth using. I've heard some good things about MX-1. So is it worth replacing with AS5/Ceramique?

The consitency of the MX-1 paste has to be very thick and dry. This makes the application more difficult but increases the perfomance and long term reliability.
Thermal paste is better than air, for thermal conduction. But, it is much worse than direct metal contact.
Too much paste is better than too little paste. That, I suspect, is why all sinks that come with paste applied come with too much of it.
