How much are you looking to spend? I can say both my Vapor-X 4870 and Vapor X 5870 were down right silent while still being good enthusiast level parts.
I went from an 8800GTX, to a GTX260, to a GTX285, and all had a very similar sound signature. With that said, I took the shroud off of my 285 and put a 120mm PWM fan directly on the heatsink and normally keep it at 800RPM. It's an option if you have really good case ventilation, otherwise probably not.
Like i said we must have diff definition because only silent computer ive seen is one that is submerged in oil, Pumps make alot of noise or dont work very well get real
