Why? The Roku Soundbridge costs more and has less features than the Airport Express. So the Soundbirdge is a bit more sexy but is it worth an extra 150 bucks? Not really.

The soundbridge is $95 more if you preorder. And it has a remote. And a screen. And works with other software besides iTunes. I guess if repeating Airport networks is a "feature" to you, then there's one the AE has, but I don't have any Airport hardware here, so the wireless features are useless.
Seriously though, the Sonos system is probably the best wireless music system coming out (although extremely expensive). That is, if Apple doesn't sue them out of existence before their product gets released.
Actually the AE's WDS feature probably will work with other wireless gear, they only advertise it to work with Airport because there is no WDS standard, at least so says this guy (http://wireless-starter-kit.com/airportblog/). Also you neglect to mention the "feature" of being able to use it as a portable WAP.
It's not like iTunes actually costs money to download so there's not real harm or foul in using it to stream your music. I do like the LCD on the Roku Soundbridge.
