I love gorgonzola, it's creamy and mild. Stilton is bitter and crumbly. They are nothing like each other.
Roquefort is an awesome blue cheese if you want something strong. Strong, salty, tangy and very blue!
they all culture Penicillium, they vary in taste and texture but they are all bleu cheeses. which is what i was getting at
personally i prefer stilton and roq to gorg, and i woudl not call gord mild, its much stronger vs stilton and roq
