I tried these at a friend's recommendation:

Holy cow. It's like a gourmet Snickers bars. I was prepared to be weirded out by the somewhat odd ingredients like dates, but nope...these were INCREDIBLY good. I ate like half the batch after making them :wub: I prefer making the fun-sized bars because they are easier to dip in the chocolate & easier to grab to snack on. Preparation is easy:
1. Mix the nougat in a bowl
2. Mix the caramel in a blender
3. Melt the chocolate in the microwave
For convenience, the ingredients:
Hand-mix this in a bowl:
1/2c Creamy Almond Butter
2T Maple Syrup
1T Coconut Flour
Blend this:
12 soft Medjool dates, pitted (about 3/4 cup packed)
1/3c Water
1/4t Salt
1/2t Vanilla Extract
1T melted Coconut Oil
+ chopped nuts (salty peanuts, sliced pecans, hand-crushed walnuts, whatever)
Melt this:
1c Dark Chocolate Chunks
1t Coconut Oil
I usually make my own chocolate for recipes that call for melted chocolate (1/2c cocoa powder, 1/2c coconut oil, 1/4c honey), but I also use Enjoy Life Chocolate Chips: (add coconut oil & microwave for 40 seconds, stir, microwave for 20 seconds, stir, and do another 10 seconds if they need it)

Coconut oil solidifies at 74F or something, so it's basically a thick white paste that you have to microwave for about 30 seconds to get it to melt. The nice thing is, it solidifies again, so when you mix it into chocolate or whatever, it gives you a nice structure instead of just being all melty. Dates are kind of an interesting choice; if you don't have fresh ones available, you can usually buy de-pitted dried dates and just soak them in water for about 10 minutes to soften them up so they'll blend. I have a really large blender, so I had to double the caramel recipe to get it to fit and not get stuck under the blade. I also used walnuts since that was all I had on hand (I just hand-crushed them).
Soooooo...these were fantastic. My nougat didn't come out like real nougat at all, but I think the almond butter in it is what made all of the flavors & textures come together - it basically made it super smooth & creamy in your mouth, with the caramel oozing out like a Snickers ice cream bar. I thought it would taste weird with all the non-standard ingredients, but it was actually awesome. I can't eat real Snickers anymore due to my food allergies, so this was a real treat for me! I will definitely be keeping these frozen in bulk for emergency treats
