Anyone have a really GOOD breakfast burrito recipe?

I've been experimenting with homemade breakfast burritos (making & freezing) so that I can have a quick meal on mornings when I don't have a lot of time to spend cooking breakfast. So far my efforts have yielded mediocre results, at best. The primary component I want is scrambled eggs. From there, I've tried cheese, sausage, bacon, etc., but they never come out as tasty as their fast-food cousins.

What do you suggest? Or do you have a recipe to share?

I would say wake up like 45 min earlier and make it fresh.

Having it sit overnight isn't gonna make it taste any good... especially cold eggs

Scrambled eggs and chorizo ... it's the bomb, add potatoes if you'd like. Rather greasy though, but well worth it ... mmmmmmmmmmmmmmmm

As far as recipes go aren't they all pretty much the same? IMO it's all about how you cook each thing instead of what goes in it. A good salsa can make all the difference though

a good salsa, a spicy cheese. Problem is freezing the stuff, that just ruins it :/

I'm dubious that dethawing/heating is less time consuming than fresh unless perchance microwaving which would certainly result in degraded taste and texture. I suppose they could be dethawed over night and then heated in an oven but you are still faced with o'ercooking and prolly still more time than fresh. Seriousry, how long does it take to make such a burrito -ten minutes? Put the utensils out and semi-prep the food the night before and in the morning pre-heat the pan and oven while doing other schtuff. Then it will be less than five minutes of actual cook/prep time.

My problem is that they don't taste that good FRESH, let alone frozen. I haven't even bothered freezing yet because I don't have a good flavor nailed down!

How good do you expect egg to taste? I only eat 'em for the nutrition and mostly in other concoctions such as crepes. It's been awhile since I made a breaky burrito.

I always take some good breakfast sausage and scramble it with the eggs and some good cheese. If you really wanna a gut buster, add some good bacon too. I really think its about using good ingredients. I like adding some chipotle sauce, which adds a smoky flavor as well as some heat. If you don't spicy food, leave it out but I really think its key for a good tasting breakfast burrito.

egg, cheese, and whatever sausage you like. Keep it simple, add a salsa or hot sauce if you like.

Cook the chorizo first, pull it out and then cook the eggs in the grease, then readd the chorizo, melt some cheese and add some tasty salsa. Perfect.

I assume you're microwaving these.

Keep you're ingredients separated. Since you aren't preparing these to be eaten right away don't make them like that. Cook all your ingredients and let them cool. Then put them together. Add the cheese last so it doesnt melt at all until you microwave it later.

Btw at McDonald's they never make burritos more than 24hrs in advance (although the eggs/peppers/sausage comes premixed frozen in a bag).

Oh the joys of living on a college campus, where's it's possible to get a great breakfast burrito coverd under the meal plan in a building less than 75 yard away. Cooking is for suckers

Red peppers, eggs, cheese, pepper/salt, tortilla soft, sausage, bacon... mmm can't really mess it up unless you burn/undercook

don't forget salsa!

I'd just eat regular Burritos. Egg isn't going to be very good reheated, whether you freeze or just store in the fridge. I suppose you could prepare everything else beforehand, but make the eggs just before putting it all together.

Probably doesn't taste as good because you aren't cooking them on a griddle that's covered with decades worth of oil.

Really I don't know what all can be done to increase the flavor. I'd probably just throw some salsa in there, but if you aren't a salsa person that probably isn't a good solution.

it's a mexican sausage. the stores around here all carry it, even the fancy ones like central markup and whole foods. in connecticut i dunno. it's always refrigerated so that'll narrow it down for you.

Part of it may be that the flour shells I get aren't too excited...has anyone tried making their own? Have a good recipe to share?
