Smoked corned beef is actually pretty common. I should try making one.

EDIT: I just realized that smoked corned beef is pastrami...

actually pastrami is peppered corn beef...

never tried it, but don't see why a corned beef smoked would be so bad... it's just kind of a beef ham...

i throw a cryovac pork loin from my freindly neighborhood warehouse store on for about 5 hours... dose it up good with a bunch of garlic salt on the fat and throw a couple beers in the water pan... great lazy man bbq...

I hate to admit it, but I am considering getting a gas BBQ just so I can smoke stuff and have a rotisserie. I would think charcoal smoking or running a rotisserie would require a lot of attention to keep the temp in the ideal range for the extended time smoking or turning something on a spit would require.

Am I full of it?


btw - I'm still going to grill on my charcoal weber.

you can get a rotisserie for your weber. it's also good for smoking if you get a remote temp sensor with alarm.

You can buy temperature probes with a remote that will alert you if the temperature goes outside a certain range.

Gas or infrared is fine for rotisserie. It would be better with actual hardwood or charcoal.

Actually running a smoker and maintaining the temps is very easy once you get the hang of it, you more or less control it with how much fuel and airflow. I set my WSM and don't touch it for a good 12 hours - yep, still at 225 just like when I went to bed.

I don't think a rotisserie is really needed for a majority of smoked goods. You are running such low heats it's really just baking things. The heat is so low that you aren't scalding the side closest to the heat. That's the beauty of using a water pan. It's there both as a heat deflection and a temperature moderator.

Regarding temps & fuel - after the initial 45 minute runup, my WSM will hold a constant 225 degrees for a solid 12 hours with a full ring of charcoal. If I'm doing a 16 hour marathon smoke of 30 pounds worth of pork butt, I'll have to add a little more fuel and give it a stir around the 10-12 hour mark to get me through.

That's tough luck Citrix. Corned beef briscuit isn't good when it's smoked. The brine overwhelmes the smoke since it's been soaking in the stuff. It does make good sandwiches though....


I suggest Boston Butts for the best pulled pork bbq. Don't try smoking ribs. Some people do it, but they're best when grilled.

You can smoke chicken, but don't overdo it on the wood. If you smoke them with hickory, it will leave an extremely acidic taste due to the amount of smoke that gets absorbed into the meat. You're better off smoking them with a natural charcoal and maybe throwing only one or two pieces of hickory in.

It's a personal opinion. I prefer chewier ribs so I generally grill them as well. I don't like the consistancy of ribs when slowly BBQ'd.

I built my own smoker.

The flower pots were $20 each in Williamsbugh, VA at an outlet.
The hotplate was on sale at Sears. $12.99
The two grates were $1 (large one) and .50 cents at a garage sale
Thermometer was already purchased for my kitchen.
The two pie plates were $1.99 each

$57 and tax.

I'm using a smoker built out of a Old Fridgeidare Fridge. Liek the 50's style. With it being insulated it allows me to smoke in the winter. So yummy goodness year round.

You can pick up chunks at meijers, walmart, just about any home store.

Oh - and hickory isn't really a good wood to smoke with. Very acidic and very strong. So make sure to not use too much.

I guess I'll see what they have at the store and go from there.

Look at the size of the chunks. Sometimes they are really small. I think walmart/meijers has some good sized chunks.
