Surprisingly Twin Cities metro is home to 18 Fortune 500 companies and world's largest private company in Cargill. I often wonder why they all chose frozen tundra as home. But to answer your question, you can watch squirrels run, there are lots of them in Minnesota.

UofMN mall is infested with the dang things.

Despite it being cold it's one of the best places to raise a family. I've lived in several places around the country and MN is still superior to them all.

I actually really like Minneapolis - if you're into theater, I'd definitely suggest checking out the Guthrie Theater. It's a beautiful building and there's always interesting shows going on there. They have an outdoor sculpture garden that's a part of the Walker Art Center, that's nice to walk through if you have an SO with you.

If you're a fan of art and/or architecture, UofMinn's art museum is designed by Frank Gehry and the campus is quite nice to walk around in.

Lastly, there's a lot of good eats around town and two Irish pubs that I rather like - The Local and Keegan's.

I haven't been in a few years, I'm sure it's changed quite a bit.

Not sure about outdoorsy stuff but from all the cooking/travel shows I've seen Minneapolis appears to be a Mecca of good cuisine. I am dying to go there just to enjoy high quality food

There are bike trails around all the lakes (bike/walking trails) and there's a chain of 7 connected lakes that go from Uptown Minneapolis to southwest Minneapolis. And by chain I mean if you rent a kyak or canoe at one of the south lakes (Harriet is a good one) you can actually canoe all the way through them and their connecting lagoons. Might be a bit chilly/windy right now for that, but we've had some gorgeous weather. : )

If you golf, all the golf courses are open. And I know (from the chatter at work) that we've several good ones.

I'd recommend biking by Minnehaha Creek. You can follow it all the way to Minnehaha Falls, which has some nice overlook areas, and iirc, is near several good restaurants that do take out, so you could bring a picnic.
