When you have guests over for a fancy meal, what do you like to cook?

Brisket, pulled pork, ribs, tritip if I'm lazy.

Then pair one of those with appropriate sides: smoked beans, potatoes of some kind, roasted veggies, salad.

For dessert, some kind of trifle, maybe a mousse, maybe just cookies or a pie.

A small gathering, like another couple, I ribeyes are my best .. or Chilli
If a bigger group, then I usually order pizzas or buy like 100 tacos from local taqueria.

Fancy stuff - Salmon or Steaks (preferably on the grill) /w potatoes or rice and some form of veggies. I'd also make a fresh loaf of bread. Maybe a salad to start. Probably a few bottles of wine.

Casual stuff - Pot of soup/chili or homemade pizza's

Typically, for pasta, squid ravioli in a lemon grass broth with goat cheese profiteroles, paired with an arugula Caesar salad. For fish, a swordfish meatloaf with onion marmalade, rare roasted partridge breast in raspberry coulis with a sorrel timbale.

When feeling especially randy, I go with grilled free-range rabbit with herbed french fries

Depends on the size of the group. For 8 people or less, Thai-style braised short rib with rice noodles.

For larger groups I avoid meals that require fancy plating. It's easier to throw out some meat, pico de gallo, guac, and other sides and let people make their own tacos.

If you a easy way out

Beet/roots veg soup
Cheese/cold cut platter or guacamole/chip
roast beef + green bean + risotto
you can buy a cake, most understand.

few bottle of wine/beer + good coffee and you're good to go.

Depends. If it's mostly dudes, I do NY strip steaks on my Namath with baked potatoes (75 minutes directly on the oven rack). Most guys will eat a medium-rare steak without complaint. If it's girls (or a mix), I do my 5-star salmon recipe on the charcoal grill with jasmine rice (via fuzzy-logic rice cooker). Both are easy & always excellent.

Calico Bean


1/2 lb raw bacon cut into 1/2 - 1-inch pieces
1 lb ground beef
1/2 cup chopped onion
1/2 cup ketchup
1/2 cup packed brown sugar
1 tsp mustard
2 tsp white vinegar
1/2 tsp salt
16 oz pork and beans
16 oz butter beans OR great northern beans (I use butter beans)
16 oz kidney beans undrained
flour to thicken (optional) (I never use)

Preheat over to 325 degrees. Cook bacon until crisp. Save bacon grease.
Put bacon aside. Brown hamburger and onion in bacon grease.
Drain. Mix in 3 quart casserole. Bake undercovered 45 minutes to 1 hour.
Serves 8.

Notes:
Do NOT microwave since it's the baking action that gives this dish it's wonderful flavor.

Okay to cut the raw bacon in larger pieces and then break into smaller pieces once cooked.

Depends on the crowd and the situation. I usually base a menu around the event. I don't really have a certain food that I always make. The last small party I had I made Italian wedding soup and home made garlic bread. Before that was a holiday get together and I made Beef Wellington with sauteed asparagus and Irish champs.
