Best Crock-Pot Recipes

So I just picked up a Crock-Pot because I suck at cooking. Unless I'm mistaken, the Crock-Pot seems pretty idiot proof.

I'm also trying to gain weight/build muscle. If any of you can provide me with some carb/protein heavy recipes, that would be awesome. Regular delicious recipes are welcome too.

Add 2-3 lb pork loin and 1/2 cup of beef broth. Cook on low for 8 hours. Drain and then pull apart with a fork and mix in barbecue sauce. You can now make delicious pulled pork sandwiches.

Just did this, yum, but instead of beef broth I used 3/4 cup of rum and some french onion soup. Also threw in garlic and shalot.

This will be ready in an hour.

The great thing about slow cookers is the flexibility. I'm adding peas and carrots. Also losing the refrigerated biscuits for Bisquick dumplings.

I love these things. Throw whatever you have in it, 8 hours later, it's dinner. Put the crock in the fridge when your done, you've got eats for half the week.

Southern Comfort Slow Cooker Pork Roast

INGREDIENTS:
2 1/2 pound pork roast
1 cup yellow mustard
2 teaspoons ground cayenne pepper
2 teaspoons white pepper
1 teaspoon cumin
1 teaspoon salt
2 Bay Leaves
3 tablespoons Worcestershire sauce
4 tablespoons Southern Comfort whiskey
8 to 10 cloves of garlic depending on size
4 cups low sodium beef broth
2 cups water
1 small red onion diced
1 20oz bottle of barbecue sauce

DIRECTIONS:

1. Remove the roast from packaging and rub all over with yellow mustard. Set roast aside to let the mustard dry until the next step is completed.

2. Combine cayenne pepper, white pepper, cumin and salt in a small bowl and mix well.

3. Rub spice mixture over roast and place in slow cooker on low with the Worcestershire sauce, Southern Comfort, beef broth, water, garlic cloves, Bay Leaves and diced onion. Let cook 4 to 5 hours.

4. Remove roast from cooker and drain off 3/4 of the remaining liquid in the slow cooker leaving as much of the diced onion and garlic as you can.

5. With roast on cutting board use two strong forks to shred the roast and then return to slow cooker while stirring in the barbecue sauce. Let cook on low 1 to 2 more hours.

6. Serve on toasted hamburger or hoagie buns

OP, if you use one of the larger (7 qt.) slow cookers and you do a recipe like this where there isn't a lot of liquid you may have to move stuff from the bottom to the top and vice versa 1/2 way through so everything is cooked the same. There is some stratification of cooked items if there isn't a lot of liquid.

Slow Cooker Carnitas

INGREDIENTS:
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon crumbled dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 (4 pound) boneless pork shoulder roast
2 bay leaves
2 cups chicken broth

DIRECTIONS:
1. Mix together salt, garlic powder, cumin, oregano, coriander, and cinnamon in a bowl. Coat pork with the spice mixture. Place the bay leaves in the bottom of a slow cooker and place the pork on top. Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture.

2. Cover and cook on Low until the pork shreds easily with a fork, about 10 hours. Turn the meat after it has cooked for 5 hours. When the pork is tender, remove from slow cooker, and shred with two forks. Use cooking liquid as needed to moisten the meat.

Serve on Tortillas garnished with fresh cilantro and toasted cumin crema

Toasted Cumin Crema:
1 tablespoon cumin seed
1 cup Mexican crema or creme fraiche
Salt and freshly ground black pepper
Place the cumin in a small saute pan over medium heat. Toast until lightly golden brown. Place in a small bowl. Stir in the crema and season with salt and pepper, to taste. Place in a squeeze bottle.

This one is actually for cooking in a Dutch Oven in a 300 degree oven, but I have made it in a Crock Pot as well. You need to extend the cooking time by 1.5 hours or so....

Spicy Dr. Pepper Shredded Pork

Ingredients

1 whole Large Onion
1 whole Pork Shoulder ("pork Butt") - 5 To 7 Pounds
Salt And Freshly Ground Black Pepper
1 can (11 Ounce) Chipotle Peppers In Adobo Sauce
2 cans Dr. Pepper
2 Tablespoons Brown Sugar

Preparation Instructions

Preheat oven to 300 degrees.

Peel the onion and cut it into wedges. Lay them in the bottom of a large dutch oven.

Generously salt and pepper the pork roast, then set it on top of the onions in the pan.

Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in.

Place lid tightly on pot, then set pot in the oven. Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it’s not falling apart, return to the oven for another hour.

Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it. Return the shredded meat to the cooking liquid, and keep warm until ready to serve.

Serve on warm flour tortillas. Top with shredded lettuce, diced tomatoes, grated cheese, avocado slices, salsa, and whatever else you’d like.

This also makes good sandwiches if you don't want to go the tortilla route...

Slow-Cooker Chicken Tortilla Soup

INGREDIENTS:
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes,mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chilepeppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil

DIRECTIONS:
1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

2.Preheat oven to 400 degrees F (200 degrees C).

3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.

4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

The first step, sadly, is not to get a Rival Crock Pot(tm). The new ones will simmer on the lowest setting, ruining foods that need lower temp cooking. Old ones are good, as are new slow cookers of other brands.

I like to do different things with the crock pot, like roasting a chicken in one or a turkey breast.

I like to use the allrecipies site because it has ratings and modded versions of the recipes

Tip: don't put vegetables in the slow cooker until near the end. Carrots turn to mushy crap after 8 hours.
