Inspired by the Food Network show

Mine would have to be the steak of foie gras @Picaso in Vegas (barely beating out the sourdough waffle @bouchon...)

The biggest piece of foie I've ever seen, cooked perfectly, on top of brioche topped with slice almonds and served with a poached pear.

Steak I made myself. cooked on a blue-hot bed of apple wood coals, And I served 4 people and it was beyond amazing to them. Been trying to recreate it since, but building a wood fire is a ton of work.

I honestly have no idea. That's both the benefit and drawback of having a poor memory.

I had a filet at a steakhouse at The Atlantis resort in the Bahamas that was so good that you sort of melt when you take a bite of it...

The Rosa pizza at Pizzeria Bianco's in downtown Phoenix. It has parmasean cheese, red onion, rosemary and crushed pistashios--absolute heaven. Close second is the Cajun Ribeye at Morton's of Chicago.

A buffalo chicken wrap from the local pub. I got the nuclear hot sauce, and it was perfect. It's the only place I've gotten something prepared that I considered hot. It came with dire warnings, and recommendations against it, but I loved it. I wish other places had "hot" items that were actually hot.

Surprisingly, I think may have to go with this. Looking at the ingredients:

Tapioca
1/3 cup small pearl tapioca
1 3/4 cups milk
16 meaty oysters, such as Malpeque, scrubbed with a brush
1 1/4 cups heavy cream
Freshly ground black pepper
1/4 cup crème fraîche
Kosher salt

Sabayon
4 large egg yolks

Sauce
3 tablespoons dry vermouth
1 1/2 tablespoons minced shallots
1 1/2 tablespoons white wine vinegar
8 tablespoons (4 ounces) unsalted butter, cut into 8 pieces
1 tablespoon minced chives

1 to 2 ounces osetra caviar

I would never have imagined it, but I have fantasized about this dish ever since I first had it years ago.
