I think Chromebook will be best for you. Checkout Acer Chromebook 14 (not convertible but best), very premium built, lightweight and long battery life. It would be able to suffice all your requirements. You'll need an external hard drive to watch movies on plane on this laptop because this chromebook offers pretty low storage.

For convertible I would recommend Acer R11 (not the best build quality but can get things done).

Wow. You see that you just blatantly ignored half of Rollcage's wishes for the device, right? Can you take notes (with a pen) on a non-convertible Chromebook? No. Sketch? No. Are they "take anywhere" items? Not at 14". It would do you good to actually get a grasp of people's wishes before offering advice.

OP: From what you're saying, I'd spend as much as possible to get as much performance as possible. Especially for sketching and note-taking, CPU performance is key (laggy pen input is a pain). I doubt anything Atom or Celeron could come even close to decent pen input latency. Also, go for something with an included/optional stylus - "touch pens" are pretty awful, both in terms of presicion and lack of control. At best it's like noting with a crayon. If you can spring it, go for a low-end Surface pro. It's not that much more than the X360 you listed. If that's too expensive, I'd go for the HP. No idea if it's any good, but at least it should beat all the others you listed.

If being able to draw and sketch on the display, then the Miix 510 is probably the cheapest you'll find with that capability - $599. I know of no Chromebook that has a sketch capability.

You are either dealing with Android tablets, old Suface devices, or a mass of used 2-in-1s they've been making recently. . I would not suggest the Surface (Pro) 2 and earlier because the portrait orientation is too awkward with the 16:9 screen compared to a 4:3, 16:10, or 3:2 screen.

One such Android tablet is the Samsung Galaxy 10.1 inch series. Again, not the latest hardware and I don't know what the used market is like in Europe, but if you want speed, it's used market or Android tablet with a GOOD CPU.

Old Lenovo X-series Thinkpads with the convertible screen might also be an option.

Obviously, it would be best to have some hands on with the devices before pulling the trigger.

Oops. My fault. Actually i missed to read that line by mistake. I agree with you there are no chromebooks yet with the sketching capabilities and my recommendation wouldn't be best choice for him for the same reason. BTW Surface pro 4 (with surface pen) is on sale currently at Microsoft Store. Here's the link - https://www.microsoftstore.com/store/msusa/en_US/pdp/Microsoft-Surface-Pro-4/productID.5072641000
