With the gt350r that basically comes with the track package you could get an upgraded audio, but no leather.

I think if you really care about the audio, there's always aftermarket. The leather, however...

I would suspect the reason for no leather on the R version is the fact that you'll probably slide around more on smooth leather on a track, than you would in the Recaro cloth seats.

Ford does the same kind of things with the Taurus SHO. You can get the SHO performance package, but if you do, you can't get the luxury features like the Driver Assist Package with the radar cruise control, lane keeper, and collision warning.

Assuming one would rarely carry normal human passengers in the rear seats, would you all rather have a new gt350 or a low miles 2010 z06, assuming price is about the same?

The one thing that the Vette Stingray has going for it is that it weighs about 500 pounds less than the Mustang GT350.

The HP to weight ratios are actually pretty similar between a Mustang GT350 and a base Vette.

Vette: 460hp, 3298 lbs = 7.17 lbs per hp
GT350: 526 hp, 3760 lbs = 7.15 lbs per hp

The Vette has a significant torque advantage, with 460 ft-lbs vs. the GT350's 429. So it's ahead even before factoring in the Mustang's 500-lb weight disadvantage.
