I'd suggest jambalaya, but as you're already doing gumbo that seems redundant. Paella would be the same too.

Hope you're not going to cook it all in one sitting. Thats a LOT of cholesterol. Break it up (if you can amd prepare it in 1/2 lb (or more) sections. Why not marinade and grill on skewers?
