I'd suggest jambalaya, but as you're already doing gumbo that seems redundant. Paella would be the same too.

I love me a good scampi. Shrimp also works well as the protein in a Caesar or Alfredo dish.

Hope you're not going to cook it all in one sitting. Thats a LOT of cholesterol. Break it up (if you can amd prepare it in 1/2 lb (or more) sections. Why not marinade and grill on skewers?

This is definitely not in one sitting. I'm going to separate it into 1/3 lb portions.

You can also add some olive oil and reduce the amount of butter if you're health conscious.
