Thanks for the excellent ideas. Made a sandwich w/mayo and tomato, not bad, but not something I'd want again. Had some leftover rice, mixed the chicken with rice and shredded cheese, and a little sour cream - really good, will make again.

Teenager was punished by having to eat the chicken sandwich and chick/rice/cheese.

I'm probably only saying this because I sent mine to grab tuna, and she grabbed tuna in oil instead of water. Four cans.

I really like chicken salad sandwiches. But, I have a fondness for them since my Mom made them fairly regularly when I was growing up. So, I know I've attached nostalgia to it. I always have a couple of cans of chicken in the cupboard.

Of course, another big reason I enjoy them so much might be that I'm allergic to tuna.
