Canned potatoes = pleasant surprise. Any other good canned foods?

Potatoes are so cheap and easily kept, though, that I can't imagine using canned. But good to know, for stocking the survival shelter, I guess.

I use canned beans quite a bit. Also canned crushed tomatoes for chili and pasta sauces.

I grew up eating a lot of canned vegetables - green beans, corn, peas, spinach. I have no idea why we didn't eat frozen, which I find infinitely more palatable.

Canned potatoes always tasted fine in corned beef hash, so I guess it makes sense canned potatoes are OK.

canned pineapple are good, as are mushrooms, depending on variety, tho I do prefer fresh.

Are there any canned ingredients that kick major butt?

I recently got into canned chickpeas. I use 3 recipes:

1. Hummus
2. Cookies (AMAZINGLY good)
3. Toasted chickpea (snack)

Hummus is incredibly easy to make - chickpeas, tahini (sesame seed paste), lemon, and any other flavors you want like garlic. You can make it in a high-powered blender or a food processor. Super easy...dump ingredients in, let it run for a few minutes, voila - tasty, high-protein dip for chips, carrots, sliced peppers, etc. I even use it as a wrap filling, makes a good glue for other ingredients!

Chickpea cookies are incredibly good. This recipe is for peanut butter chocolate-chip chickpea cookies, which sounds pretty crazy, but is actually the bomb! You use a food processor to make it. They come out as a combination of cookie and cookie dough - it doesn't really go flat like a cookie, so I just leave them as round balls to eat (best of both worlds - baked cookie dough bites!). They also freeze extremely well, so if you nuke them in the microwave for 20 seconds they're ready to go:

Roasted (toasted) chickpeas are also the bomb - I was only introduced to them this past January. They're kind of a combination between a peanut and macadamia nut - large & chewy like a macadamia nut, but not as hard as an actual roasted nut. Makes a great snack because you can flavor them however you want. Here's the basic procedure:

I'm a fan of canned tomatoes. I use the whole peeled variety when I make salsa, and I use the basil/garlic/oregano-seasoned ones for a bunch of different things.

Pro-tip:

Use whole canned tomatoes for any canned tomato needs. The "better" maters are used for them. Buy the quart size for better value as you'll hardly ever need just one can.

Canned green beans with potatoes are actually pretty good.

Canned foods are good well past their "expiration" date. They just start to lose some of their flavor after a few years. We can a bunch of stuff and are still very careful about botulism. You can essentially can/preserve just about anything. The swedish/dutch do some crazy stuff in a can.

Any buy your canned goods in bulk when walmart or your store have a sale. Generics are just as good as name brands here.

We have beer snobs and pizza snobs now....it goes to say that this should extend to the basic spud

You probably have never lived in the south; pro-tip, some eggs with fried spam and grits is the best tasting breakfast ever.

Hormel canned ham isn't bad either for cooking like split-pea soup.

I use canned tomatoes - puree, diced, and crushed in many recipes.

I never liked it as a kid, but learned to appreciate it when all these Hawaiian BBQ joints popping up. Now I make spam and eggs every now and then. Didnt think about adding grits...maybe I'll try it this weekend.

canned is great if making anything in the crock pot. Thats about the only time i use them.

X1,000 That's #1 on my most disgusting foods of all time list. Just imagining the smell makes me start gagging.

Meh. We buy bushels of corn when it's in season and can our own creamed corn. It's absolutely delicious. Incredible sweet corn taste.

The stuff you buy isn't anywhere near the same taste though.

if the option is there, I generally think frozen tastes a lot better than canned at the same convenience level, and I think frozen is better than fresh unless the fresh goods are in-season (excepting for stuff like asparagus, brussel sprouts, etc that just don't freeze well and obv. you don't want to use frozen if you're making something like a salad where the veggies are the star of the dish)

I love frozen onions and carrots for stews (corn too unless it's in-season). I almost always make tomato sauce with canned tomatoes, though, unless I can get fresh-off-the-farm amazing tomatoes to use. also beans, but it requires rinsing them under cold water to get the slime off first.
