canned asparagus and the stink that fills the house when you open the can is why i will never eat it. canned or fresh.

You'll never know the joys of funny smelling pee then. I wouldn't eat canned asparagus though. Fresh steamed or roasted - I'd eat a whole bunch.

I know a lot of people that tell me I'm nuts, but I really don't mind canned tomatoes. Just gotta get the low-sodium ones.

Hmm... other things I eat from a can...

Maybe not so much? I buy corn and peas frozen. Can't stand canned meats.

I do use canned beans for chili, *ducks* but that's more because I don't want to soak/cook them myself. I have no idea if the dried ones would taste better. Either would be shelf-stable for a long time.

And I probably have a few cans of soup kicking around the back of the pantry.

well, those people are indeed nuts.

canned san marzano tomatoes are fantastic.

if the option is there, I generally think frozen tastes a lot better than canned at the same convenience level, and I think frozen is better than fresh unless the fresh goods are in-season (excepting for stuff like asparagus, brussel sprouts, etc that just don't freeze well and obv. you don't want to use frozen if you're making something like a salad where the veggies are the star of the dish)

I love frozen onions and carrots for stews (corn too unless it's in-season). I almost always make tomato sauce with canned tomatoes, though, unless I can get fresh-off-the-farm amazing tomatoes to use. also beans, but it requires rinsing them under cold water to get the slime off first.

Yes, flavor wise frozen will be better. But what cans give you is tremendously long shelf life.

For beans, hard to beat dried beans for storage and taste.

canned creamed corn is awesome!

I use canned tomatoes all the time. I also like canned green or yellow beans.

canned beets are great too,

not fond of spam but i do like canned corned beef (hereford).

Sauerkraut is a given. Asparagus can be iffy depending on the brand, and more expensive isn't always better, but when it's good, it's pretty good, but not like fresh.
all saurkruats in the can are really crappy! Go with the Saurkraut in the jar!!

I hear that canned tomatoes are better for sauces all the time. Can someone explain to me why and what kind I should be looking at? There are so many different variations.

Canned peas are great - if you accidentally swallow some poison just eat canned peas. You'll be throwing up in seconds.

Well those certainly look interesting. I know what I'm making this weekend!

They are actually super-good, I pretty much make a batch a week haha. Pro-tip: don't throw the chocolate chips in the food processor after you make the dough (unless they're frozen solid & you don't really care) because the chocolate will get chopped up & start to blend in with the dough (turning it chocolate) rather than staying as chips to melt in the cookie. It's easier to remove the bowl & just mix them in by hand with a wooden spoon or something. Ask me how I know that :whiste:

Canned spinach is vile. Popeye was nothing but a shill marketing nasty stuff to gullible kids.


Fresh or even frozen spinach is a thousand times more edible than canned.

I always liked the canned mixed vegetables specifically because of the potatoes. The rest of the veggies in the mix are alright.

You really should. You're fooling yourself (and wasting money) buying canned "San Marzano" tomatoes. 1. they're probably not. 2. They're canned so who even cares?

The best paste tomatoes in the world are San Marzanos. For all of us who dont live in Italy and can get fresh ones, imported canned ones are the next best thing. Although I did a ncie job growing my own and a farmer around me grows compettion tomatoes including SM. I grabbed 2 bushels from him 2 tyears ago and canned it all.

You typically don't eat San Marzanos by themselves like in a salad, they are not juicy. Since these will be cooked down and made into sauce, canning is fine.

I mentioned it a few posts up, but any type of canned San Marzano is what you want. Whole is generally preferred, simply because you can expect know that they haven't been mucked with as much.

I prefer to use a combo of the whole and "polpi" basically the pureed, which offers more texture. I never, ever, never use "tomato paste." Yuck.

That's actually completely accurate. The truth is, spinach isn't all that great. Watermelon as the exact same nutritional value as spinach.

But why does every one believe otherwise? Marketing, of course!

Some federal nutrition board, c. 1910s or so, was compiling nutritional values of various food items to try and set certain food standards. The nutritionist reporting his data regarding spinach, actually fucked up the math by one digit. Meaning, the official word on spinach was that it contains 10x the iron that it actually contained.

Believing this to be accurate, this was obviously a remarkable discovery. Spinach was suddenly the new superfood and with very little thought, farmers were soon instructed to produce metric shitloads of spinach. There was suddenly, inexplicably, a lot of money invested in spinach. At the same time, this popeye cartoon was quite popular and the spinach lobby found an excellent opportunity to make spinach popular.

The idea became so pervasive, the strategy to overwhelmingly successful, that even after the funny math was corrected and published only some 10? years later, the spinach lobby was too big to stop.
