Can't get MSI X370 SLI PLUS motherboard to post with Nvidia cards!

I have now 2x MSI x370 boards/ 2x ryzen 1700 from the amazon deal, they sent me an advanced replacement, but the craziest thing is I can't get these two board to even POST with either my two EVGA geforce 1080 or my older 770. It can post with an old 7950 but will crash randomly. I've tried the lastest beta V3.51, with one of the boards and still does not help. Running Ballistix LT and Team Dark at low speeds. This is nuts! Trying to figure out who to blame as i have so many permutations! The video cards all work find in my old i7 920 system.

It actually sounds like an issue with your PSU and it not supplying enough voltage at startup. I would try another PSU and see if the problem persists. If you're using cable extensions they could also be causing an issue. There is virtually no way to get 2 motherboards in a row with the same issue. So I would start looking into other areas like your PSU.

I have Corsair 1050W and Evga G2 750W. I have the 1080s running SLI fine on the i7 920. I think the Power Supplies are ok

Try the power supply that you have running in the i7 920 rig on the X370. If you refuse to eliminate possibilities as the potential issue you are never going to get to the root of the problem.
