Category 5e UTP is a newer spec, and holds a higher certification than Category 5 UTP.
To keep the level of certification, ALL components must be at the same level classification. If you pull 5e cable, you ABSOLUTELY must use Cat 5e panels, outlets, inserts, jumpers, surge protectors, etc.
If you run Cat 5e, you ABSOLUTELY should NOT use Cat 5 (i.e., less than Cat 5e) components to save money. There may be some interoperability issues between the levels. There may also be some interoperability issues between the various manufacturers' components (since they all use different techniques to achieve the Category rating....and only using their own components).
Shop for the system, cable and components, for both / all three levels (you didn't mention Cat 6) from one manufacturer, pick the one that hits the closest to your price point, and go with it. DO NOT mix vendors....it may be a costly troubleshooting headache.
