Isn't it funny how chia started out like this:

And then all of the sudden its the new health food? Why did it take so long for someone to realize the health benefits of it?
I started noticing "chia" when we were buying baby packets and one of the ingredients was chia. In the last year I've seen a lot more competition for drinks with chia seeds floating in them, and now its being sold in bulk at whole foods.
That isn't what amazes me though. What amazes me is this is yet another superfood that was farmed by Mayans/Aztecs. Along with:
- Quinoa
- Amaranth
- Cocoa
- Corn
- Spirulina
What I don't understand is with all the full proteins they had available, why did Aztecs often resort to cannibalism?
So back to my original point. Why did it take so long for chia seeds to become a food rather than a toy?
