Because rubes will pay more for things that they *think* are better. Some of those things are legitimate and some of those things (eg: non-GMO/organic) are total marketing BS that people just eat up.
Doesn't change the fact that it costs more. Those things don't appeal to me, but it doesn't change the fact that they make a damned fine-tasting burrito. It's their founder's personal values which he shares with a portion of their customer base. No doubt, those customers made their decision based on that just like Whole Foods' customers. Even if I don't care about factor-farming and suffering-free meants, they might be doing something right: I couldn't name an example of a nation-wide grocery chain to compare to Whole Foods when I made the banana/steak comparison. :hmm:
