I was trying to figure out the difference between 570s that EVGA has. Not that I plan to buy one but I figure it would give insight to what they might have for the 670. I looked at 3 different models but only difference I saw was memory. What else is going on?

Simple:

(1) Reference model (1571)
(2) Custom cooler model (1577): http://www.evga.com/products/moreInfo.asp?pn=012-P3-1577-AR&family=GeForce 500 Series Family&sw
(3) 2.5GB model (1579)

That seems typical of EVGA - almost all of their models have reference coolers, other than the special edition models that appear much later. I would expect EVGA to only have one model of the 670 at launch.

So the custom cooler one just runs cooler under load than the reference?

Most custom coolers, including that EVGA GTX570, are usually a more open design, which means they run cooler but push less air out the back of the card, leaving more hot air inside the computer case. I have a reference cooler on my EVGA GTX460, and it's very cool and quiet, but for higher-end cards, you may (or may not) want the open design. That custom 570, for instance has two fans in an open frame.
