Cosmology@home has published an reasonably good explanation of the project in this letter to the crunchers.
In short:

The goal of Cosmology@Home is to search for the model that best describes our Universe and to find the range of models that agree with the available astronomical and particle physics data.

Thought I would note some changes from the currently listed project status's (some of which I think have been made before):

Docking - Windows WUs have been flowing for quite some time now (i.e., not just MAC and LINUX any longer).

RenderFarm - Their "new" web site has only this on it: Suspended for indeterminate time

Translator@Home - On their web site, they have: April 29, 2006
Due to lack of interest and lack of funding this project has now been suspended.

Hashclash - Haven't sniffed a WU from these guys for a very long time. Can't access the web site.

The Lattice Project - This is now open.

It is a BOINC wrapper for distributed.net called: Yoyo@Home.

It's well past time for an update. I finally finished a huge, multi-month project so I finally had a few minutes to sit down and make some changes to the list.

As always, thanks for keeping the updates coming so I don't have to watch the entire "Intarweb" for project information on my own!

I just updated the links for Belgian Beer and LHC@Home. Belgian Beer had the right info but it was formatted wrong so the link didn't work. LHC has a new address. If you are attached to LHC, you'll want to detach and reconnect with the new address. (You still won't get any work for either project right now, but if you're like me and enjoy having 50 projects listed in your BOINC manager window, go for it.)

PS: The site is still alpha, but is now open for registration on their site only! (You cannot do it through the BOINC Manager.)

The WUs take from 1 to 3+ hours and currently get 50 credits. That will change in the future.

TeAm AnandTech is currently ranked 12th overall.
